Spinach and Feta Turkey Burgers

Yields ~ 4 - 1/2 lb burgers / 8 - 1/4 lb burgers

Ingredients:

  • 1 lb ground turkey

  • 1 cup fresh spinach, finely chopped

  • 1/3 cup crumbled feta cheese

  • 1/4 cup breadcrumbs (optional for binding)

  • 1 egg

  • 2 cloves garlic, minced

  • 1 tsp onion powder

  • 1/2 tsp dried oregano

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • Olive oil (for cooking)

Instructions:

  1. In a large bowl, combine the ground turkey, spinach, feta cheese, breadcrumbs (if using), egg, minced garlic, onion powder, oregano, salt, and pepper.

  2. Mix gently with your hands until all ingredients are just combined. Avoid overmixing to keep the burgers tender.

  3. Divide the mixture into 4 equal portions

  4. Shape each portion into a patty, about 1/2 inch thick.

  5. Heat a drizzle of olive oil in a large skillet or grill over medium-high heat.

  6. Cook the patties for 4-5 minutes per side, or until fully cooked (internal temperature of 165°F).

To Assemble Bomb Burgers:

  1. Toast ya buns.

  2. Place the turkey burger on the bottom bun over a bed of shredded lettuce. Add thinly sliced cucumber, tomatoes, red onion, and shredded lettuce. Top with a hearty portion of tzatziki sauce.

  3. Serve with a bomb side, like sweet potato fries, my oven roasted fries, or a fresh green salad.
