Oatmeal ‘Anything’ Cookies

Yields: ~ 20 cookies

Supplies needed:


Ingredients:

  • 1 cup unsalted butter, softened

  • 1 cup packed brown sugar

  • ½ cup granulated sugar

  • 2 eggs

  • 2 tsp vanilla extract

  • 1½ cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp baking powder

  • 1 tsp cinnamon

  • ½ tsp salt

  • 2 cups oats (I like to use minute or quick oats)

  • 1 - 1 ½ cups of chocolate chips/raisins/butterscotch chips - or anything else you’d find delicious in a cookie. Your cookies, your rules… (:

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.

  2. Cream butter and sugars in a large bowl with a hand mixer until light and fluffy, about 2-3 minutes.

  3. Add eggs and vanilla and beat until well combined.

  4. In a separate bowl, combine flour, baking soda, baking powder, cinnamon, and salt.

  5. Gradually add the dry ingredients to the butter mixture. Then, fold in the oats and chocolate chips using a wooden spoon or rubber spatula.

  6. Scoop dough, form into balls, and place on onto the baking sheets, about 2 inches apart.

  7. Bake for 10-12 minutes or until the edges are golden and centers look just set.

  8. Cool on baking sheet for a few minutes, then transfer to a wire cooling rack.


Store in an airtight container for up to a week.
