Oatmeal ‘Anything’ Cookies
Yields: ~ 20 cookies
Supplies needed:
Mixing bowls (large and medium)
Hand mixer
Wooden spoon or Rubber spatula
Wire rack (for cooling)
Ingredients:
1 cup unsalted butter, softened
1 cup packed brown sugar
½ cup granulated sugar
2 eggs
2 tsp vanilla extract
1½ cups all-purpose flour
1 tsp baking soda
½ tsp baking powder
1 tsp cinnamon
½ tsp salt
2 cups oats (I like to use minute or quick oats)
1 - 1 ½ cups of chocolate chips/raisins/butterscotch chips - or anything else you’d find delicious in a cookie. Your cookies, your rules… (:
Preheat oven to 350°F and line a baking sheet with parchment paper.
Cream butter and sugars in a large bowl with a hand mixer until light and fluffy, about 2-3 minutes.
Add eggs and vanilla and beat until well combined.
In a separate bowl, combine flour, baking soda, baking powder, cinnamon, and salt.
Gradually add the dry ingredients to the butter mixture. Then, fold in the oats and chocolate chips using a wooden spoon or rubber spatula.
Scoop dough, form into balls, and place on onto the baking sheets, about 2 inches apart.
Bake for 10-12 minutes or until the edges are golden and centers look just set.
Cool on baking sheet for a few minutes, then transfer to a wire cooling rack.
Store in an airtight container for up to a week.
