Cucumber Tomato Salad

Ingredients:

  • 1 cucumber - halved and thinly sliced

  • 1 large heirloom tomato - halved and thinly sliced

  • 1/8 red onion - thinly sliced

  • 1 tbsp extra virgin olive oil

  • 1/2 tbsp red wine vinegar

  • 3/4 - 1 tsp dried dill (or 1 tbsp chopped fresh dill)

  • salt to taste

  • optional - crumbled feta cheese

Instructions:

Whisk the oil, vinegar, and spices together. Add the tomatoes, cucumbers, onions and feta. Store in an airtight container in the fridge.
