Italian Bean Salad
Ingredients:
1 can chickpeas (drained & rinsed)
1 can great norther beans (or any other white bean of choice)
3-4 slices deli salami - roughly chopped
3-4 slices deli turkey - roughly chopped
1 bell pepper - diced
1/4 cup red onion - diced
1/2 chopped banana peppers (jarred, not fresh)
1/2 cup fresh basil - chopped
1/2 cup fresh mozzarella - chopped
1/4 cup olive oil
2 cloves garlic - minced
1 tsp oregano
pinch red pepper flakes
Salt and pepper to taste (generous on the salt)
Whisk the olive oil, vinegar, and spices together. Add the remixing ingredients and toss to combine. Store in an airtight container in the fridge for 3-5 days.
