Grilled Veggie Salad
Ingredients:
1 medium zucchini, cut into half moons
1 cup cherry tomatoes
1 1/4 cup corn (1 cob)
2 tbsp olive oil
1 tbsp lemon juice
1/2 clove garlic, minced
1/2 tsp oregano
Pinch dried basil
Salt and pepper to taste
1/4 cup feta cheese
1 cup arugula
Instructions:
Grill zucchini and tomatoes on kabob sticks or in a grill basket on medium-high heat.
At the same time, grill 1 whole cob of corn - or add loose kernels to the grill basket once the zucchini and tomatoes are 3/4 of the way done.
Whisk olive oil, lemon juice, garlic, oregano, basil, salt and pepper together in a large bowl. Adjust to taste.
Add grilled veggies, arugula and feta to the bowl with the dressing. Toss and serve.
