Grilled Veggie Salad

Ingredients:

  • 1 medium zucchini, cut into half moons

  • 1 cup cherry tomatoes

  • 1 1/4 cup corn (1 cob)

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • 1/2 clove garlic, minced

  • 1/2 tsp oregano

  • Pinch dried basil

  • Salt and pepper to taste

  • 1/4 cup feta cheese

  • 1 cup arugula

Instructions:

  1. Grill zucchini and tomatoes on kabob sticks or in a grill basket on medium-high heat.

  2. At the same time, grill 1 whole cob of corn - or add loose kernels to the grill basket once the zucchini and tomatoes are 3/4 of the way done.

  3. Whisk olive oil, lemon juice, garlic, oregano, basil, salt and pepper together in a large bowl. Adjust to taste.

  4. Add grilled veggies, arugula and feta to the bowl with the dressing. Toss and serve.
