Pineapple, Jalapeño, Cucumber Salad

Ingredients:

  • 1/2 pineapple - chopped into bite size cubes

  • 1/2 cucumber roughly chopped (I quarter it, then thinly slice)

  • 1/2 jalapeño - minced

  • Juice and zest from 1 lime

  • 2 tbsp red onion - finely chopped

  • 2 tbsp fresh cilantro - chopped

  • Pinch of salt ~ to taste


Mix together in a large bowl. Store in the fridge for up to 3 days.
