Classic Tomato Basil Soup

Ingredients:
1 tbsp olive oil
1 small yellow onion, diced
2 large garlic cloves, minced
1 (28 oz) can of whole peeled tomatoes
1 cup vegetable broth
1 tsp Italian seasoning
1/2 tsp smoked paprika
Pinch red pepper flakes (optional)
1 tsp sugar (optional - to lightly sweeten)
1/4 cup heavy cream
Fresh basil leaves
Salt and pepper to taste
Instructions:
Heat olive oil in a large pot or dutch oven over medium heat. Sauté onion until translucent then add the garlic. Cook until fragrant - about 30 seconds to a minute.
Add the tomatoes (with juice), vegetable broth and seasonings of choice. Bring to a simmer.
Simmer for about 20 minutes.
Using an immersion blender, blend until smooth. Stir in heavy cream.
Garnish with fresh basil and serve with your favorite crusty bread or grilled cheese.
