Classic Tomato Basil Soup

~ 4 servings

Ingredients:

  • 1 tbsp olive oil

  • 1 small yellow onion, diced

  • 2 large garlic cloves, minced

  • 1 (28 oz) can of whole peeled tomatoes

  • 1 cup vegetable broth

  • 1 tsp Italian seasoning

  • 1/2 tsp smoked paprika

  • Pinch red pepper flakes (optional)

  • 1 tsp sugar (optional - to lightly sweeten)

  • 1/4 cup heavy cream

  • Fresh basil leaves

  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large pot or dutch oven over medium heat. Sauté onion until translucent then add the garlic. Cook until fragrant - about 30 seconds to a minute.

  2. Add the tomatoes (with juice), vegetable broth and seasonings of choice. Bring to a simmer.

  3. Simmer for about 20 minutes.

  4. Using an immersion blender, blend until smooth. Stir in heavy cream.

  5. Garnish with fresh basil and serve with your favorite crusty bread or grilled cheese.
