Hearty Lentil and Vegetable Soup
Approx. 4 servings
Ingredients:
2 tbsp olive oil
1 carrot, diced
1 celery stalk, diced
1 small onion, diced
1 cup dried lentils
4 cups vegetable or chicken broth
1 can diced tomatoes
1 tsp cumin
1 tsp smoked paprika
1/2 tsp dried coriander
Salt and pepper to taste
Instructions:
In a large pot or dutch oven, sauté carrot, celery, and onion in olive oil until soft.
Add lentils, broth, diced tomatoes, and spices.
Simmer for 30-40 minutes, or until lentils are tender. Serve immediately. Use a fresh herb like parsley to garnish.
