Hearty Lentil and Vegetable Soup

Approx. 4 servings

Ingredients:

  • 2 tbsp olive oil

  • 1 carrot, diced

  • 1 celery stalk, diced

  • 1 small onion, diced

  • 1 cup dried lentils

  • 4 cups vegetable or chicken broth

  • 1 can diced tomatoes

  • 1 tsp cumin

  • 1 tsp smoked paprika

  • 1/2 tsp dried coriander

  • Salt and pepper to taste

Instructions:

  1. In a large pot or dutch oven, sauté carrot, celery, and onion in olive oil until soft.

  2. Add lentils, broth, diced tomatoes, and spices.

  3. Simmer for 30-40 minutes, or until lentils are tender. Serve immediately. Use a fresh herb like parsley to garnish.
