Crispy Oven Roasted French Fries
Ingredients:
4 medium russet potatoes (or Yukon Gold for a creamier texture)
2–3 tbsp olive oil (or avocado oil)
1 tsp garlic powder
1/2 tsp onion powder
1 tsp smoked paprika
½ tsp ground black pepper
1 tsp sea salt (plus extra for sprinkling)
Get crazy with the garnish: chopped parsley, grated Parmesan, or a squeeze of lemon
Instructions:
Wash the potatoes. Peel if desired. Cut into even sticks, about ¼-inch thick. Soak the cut potatoes in a bowl of cold water for at least 30 minutes (or up to 1 hour). This removes excess starch and helps them crisp up.
Preheat your oven to 425°F. Line a large baking sheet with parchment paper.
Drain the potatoes and pat them completely dry with a clean towel.
In a large bowl, toss the potatoes with olive oil until lightly coated. Add garlic powder, onion powder, smoked paprika, black pepper, and salt. Toss to evenly coat.
Spread the fries out in a single layer on the baking sheet. Avoid overcrowding; they should not touch to ensure even cooking. Use two sheets if needed.
Bake for 20 minutes. Flip the fries with a spatula or tongs. Rotate the pan if necessary. Continue baking for another 15–20 minutes until golden and crispy. For extra crispiness, broil them for 2–3 minutes at the end.
Sprinkle with a little extra salt immediately after removing from the oven. Add optional toppings like parsley or Parmesan if desired.
Serve hot with your favorite dipping sauces like ketchup, aioli, or spicy mayo.

For maximum crispiness, use a wire rack on your baking sheet.
