Stuffed Jalapeños with Bacon

Ingredients:

  • 12 jalapeños, halved and seeded

  • 8oz cream cheese, softened

  • 6-8 slices of bacon

  • 3 tbsp fresh chives or green onion, chopped

  • 1 cup cheddar cheese, shredded

  • 1/2 cup panko breadcrumbs

  • 1 tbsp butter, melted


Instructions:

  1. Preheat oven to 400°F

  2. In a skillet over medium heat, cook the bacon until crispy then transfer to a paper towel-lined plate to drain. Once cooled, chop into small bits.

  3. In a mixing bowl, combine the softened cream cheese, chopped bacon, shredded cheddar cheese, and chopped chives or green onions. Mix until well incorporated.

  4. Spoon the cream cheese mixture into each jalapeño half, filling them generously.

  5. In a small bowl, mix the panko breadcrumbs with the melted butter until the breadcrumbs are evenly coated.

  6. Place the stuffed jalapeños on a baking sheet lined with parchment paper

  7. Sprinkle the breadcrumb mixture over top of each jalapeño.

  8. Bake for around 20 minutes, or until the breadcrumbs are golden brown and the jalapeños are tender.
